YELLOW-FIN WHITING IN FRESH SEAWATER

Ingredients

  • 8 x Yellow-fin Whiting fillets
  • Fresh seawater
  • Desiree potatoes
  • Spring onions
  • Butter
  • Black pepper Lemon

Method

  1. Bring water to simmer
  2. Add a blob of butter
  3. Add cracked pepper
  4. Lower fish fillets in the simmering seawater and cook until flesh becomes white
  5. Remove using an egg slide making sure it is well drained
  6. Place on mashed potato
