Soused Australian Herring (Tommies)

  • 12 Australian Herring fillets trimmed
  • 600l water
  • 129g salt
  • 500ml white wine vinegar
  • 200g red onion sliced
  • 2 bay leaves
  • 12 black pepper corns
  • 1 lemon sliced
  • 200g caster sugar


  1. Roll the fillets and place a cocktail stick to hold. Mix water and salt together and cover the fillets with the liquid (brine). Leave to stand for approx 3.5 hours, then remove fillets and wash under cold water
  2. Add vinegar and rest of ingredients in a pan and bring to a boil and allow to cool
  3. Pour over fillets, cover and place in fridge, after 2 days turn fillets and place back in fridge for 1 more day
  4. Remove and serve with some of the sliced onions and a little of the liquid warm bread
